Scooter’s Coffee to Open Shop in Princeton

The coffee chain, which also offers smoothies, pastries and breakfast foods, has been expanding in the Dallas market of late.

Scooter’s Coffee, the Omaha, Nebraska-founded drive-thru coffee franchise, has plans to open a Princeton location. According to a new project filing, it will open along Princeton Oaks Blvd and W Princeton Dr.

With an estimated cost of $350,000, the 664-square-foot coffee shop will be a new building kiosk that includes drive-thru service. Construction is set to begin in March of next year and be completed by May. An exact opening date has not yet been announced, but in an email to What Now Dallas, franchise owner Matt Robinson said he expects that it will be summer of 2022.

Robinson, who is no stranger to the brand, originally signed his agreement with Scooter’s Coffee in 2020 to bring a new location to Carrollton. He later transferred his franchise territory from Carrollton to Princeton and will now open his shop there.

Being from Omaha, Robinson always loved Scooter’s Coffee and had been a longtime customer. He began missing the brand after moving to Dallas several years ago and decided to open his very own Scooter’s Coffee.

“I was always amazed with not only the coffee but also the level of service and positivity from employees. After moving to DFW in 2018, I started missing my weekly Scooter’s visit so I looked into franchising with them,” Robinson shared. “Every step of the way I was thoroughly impressed with the business and what it stands for. I truly believe it’s a special brand and am extremely excited to bring it to Princeton to give the same amazing experience I’ve had for many years.”

This will be the first Princeton opening for Scooter’s Coffee. Over the past few years, the brand has been growing its presence in Texas, signing several multi-unit agreements to open new coffee shops across the Dallas-Fort Worth metroplex. Locations are currently in McKinney, Addison, The Colony, Little Elm, and Garland.

Founded in 1998 by Don and Linda Eckles, Scooter’s Coffee roasts only the finest coffee beans in the world at its headquarters in Omaha. Its menu includes artisan espresso drinks, fruit smoothies, baked-from-scratch pastries and its signature “Caramelicious” drink.
