According to the website, the Vaqueros food truck that launched in 2018 was a continuation of Arnold’s Texas Bar-B-Q that began in 1979.  Arnold’s son, Arnulfo “Trey” Sanchez revived the BBQ business with the food truck, applying the ample experience he acquired as a kid, watching his father win BBQ cook-offs across Texas.

The Vaqueros website says it simply: “Have pit. Will Travel.” This indicates the mobile nature of their current business, popping up at private events, festivals and celebrations.

In addition to traditional menu items like brisket, ribs and sausage, Vaqueros also offers burritos, nachos, and tacos like the BBQ Birria and Smoked Cochinita Pibil. Unique sides include apple gorgonzola slaw, smoked refits, spicy cucumber salad and jalapeño mac-and-cheese.
