Called Isla & Co., the restaurant draws its inspiration from the culture of the Australian hospitality industry, as well as influences from Europe and South East Asia. It serves all-day brunch, globally inspired dishes, and specialty coffees and cocktails.

“It’s a slightly elevated, really approachable dining destination that goes from brunch to specialty coffee to nighttime,” Tom Rowse, business development and marketing manager for Parched Hospitality Group, told The Palm Beach Post.

The concept’s first location is opening next week in Brooklyn, New York, at the The William Vale luxury hotel. Along with Dallas, Isla & Co. will also open locations in West Palm Beach and Miami Beach, Florida; and Atlanta, Georgia. According to the brand’s Instagram page, these locations are set to open throughout spring and summer 2022.

An opening month for the Dallas location has not been announced, but it is coming to the Uptown district at 3403 McKinney Ave, per the brand’s website. The space was previously home to Harris’ House of Heroes, a family-inspired casual restaurant that offered upscale American comfort food.

Menu-wise, guests can expect to see plenty of breakfast and brunch options at Isla & Co. including avocado toast, French toast and egg scrambles, as well as burgers, pastas, fish and chicken dishes, and salads. Matt Foley, executive chef for Parched Hospitality Group, says the all-day brunch menu transitions into a dinner menu, and that they’re really into building on seasonal and local flavors. Cocktails, craft beer, and natural and organic wine will also be offered.

All of the group’s spaces include an outdoor area, as well, so the Dallas location will likely include a patio when it opens.

Parched Hospitality Group also owns and operates five other concepts – Hole In The Wall, The Sentry, Daintree, Isla and Ghost Burger.
