Mark Smith and his wife, Cory, began toying with the idea of opening a coffee shop about 15 years ago, and now their dream is becoming a reality. Both are from Washington State, where coffee shops are on just about every corner. When they moved to Texas, they decided to add a coffee option for locals, and Twitch Coffee was born.

The couple initially wanted focus on developing a small, drive-thru concept to focus on speed, but based on feedback, they decided to open cafe-style brick-and-mortar locations. Twitch Coffee will continue to be quick-service, but guests will have the option of dining in to work or catch up with friends while enjoying a coffee. A drive-thru option will also be offered.

Twitch Coffee will focus on flavor. “The food selection, the taste of the drinks—that’s a big thing for us is the taste,” Mark said. The Smiths were selective about the coffee they chose, so Twitch Coffee will offer drinks using single-batch coffee from one location in South America.

The menu has recently been finalized and will include a variety of coffee and tea options—lattes, mochas, macchiatos, Americanos, and others. “We’re serving some things that are more Tejano, Texas, Mexico-related like Mexican Hot Chocolate,” Mark said. The menu will feature Tiesta Tea, which will be offered in a variety of fruity flavors, plus sweet tea. Other options include milkshakes, malts, and smoothies, as well as Mexican Coke, Fanta, and Sprite. Extra espresso shots can be added to drinks, and Signature Drinks will be available, but Smith said they are keeping those a surprise for now.

The Twitch Coffee food menu is diverse and will include crowd favorites such as breakfast sandwiches, plus Crunchers—a hot-pressed tortilla with a variety of fillings, the Nutty Waffle Cruncher with toasted waffles and a peanut butter and Nutella filling, Rosemary bread sandwiches, and pastries.

“Whether we came from another state or not, we’re all about local. We’d like to make Johnson and Tarrant Counties our home,” Mark said, “in terms of where we’re well-known as operating.” They intend to open other locations, as well as coffee and food trucks in the local area.
