The incoming Paco’s Mexican Cuisine will be located at 156 W. Fourth St., Fort Worth, Texas 76102. Francisco Islas, the restaurant’s president and executive chef, says the grand opening will take place on Friday, July 8 at 12:00 pm CST.

The new Fort Worth establishment will be located within Sundance Square – a “pedestrian-friendly downtown district” equipped with “clothing chains, Western-wear shops, steakhouses, sports bars…and small theaters.”

As reported by Downtown Fort Worth, Inc., Paco’s was originally founded as Paco & John in 2007 by father and son Francisco and “Paco” Islas. The quick-service taco start-up operated out of a former gas station before transitioning to a full-service restaurant in the Near Southside area of Fort Worth. Islas says the location’s six-year anniversary is nearing.

The “family-owned restaurant with a corporate structure” offers unique takes on traditional Pachuca, Mexico dishes. For example, their regional tacos de chapulin – grasshopper tacos – come topped with garlic butter, pico de gallo, and queso fresco (as opposed to guacamole, salsa, and lime juice). They also offer brimming molcajetes (stone bowls stuffed with a variety of deliciously seasoned meats and veggies) and the ever-popular birria tacos con consome (slow-stewed meat tacos with broth for dipping).

When asked about the incoming restaurant’s Fort Worth location, Islas explained, “My family and I have lived in Fort Worth our whole lives. We are excited to be able to add to this fast-growing town that we’re happy to call our home.”
