Adios Fajitas Plans August Opening

Rockwall will soon become home to this concept that offers to-go fajitas, margaritas, and more.

A new restaurant concept with a focus on high-quality fajitas is opening in Rockwall. Adios Fajitas partner Heather Torres told What Now Dallas that the goal is to open in mid-August, but it depends on construction.

Heather teamed up with managing partner, Nick Gambill, and her husband and business partner, Richard Torres, to open Adios Fajitas. Richard wanted to offer high-quality fajitas and other items to go, and the concept was born. The couple lives in the area and wanted to open their first location in Rockwall. “We just saw a need for families on the go to be able to order food and have it delivered or pick it up,” Heather said. Adios Fajitas will be located at 445 E I-30, Rockwall, TX 75087.

Adios Fajitas won’t offer indoor seating, but the menu will be available for pick-up, delivery, and full-service catering. The main concept is already-prepared fajitas. They plan to use Texas Wagyu beef for their steak fajitas and free-range, antibiotic-free, Texas-raised chicken for chicken fajitas. The menu will also offer quesadillas, fajita taco salads, and lunch-priced items such as burritos, plus chicken tenders and fries for the kids.

Any marinade and seasonings will also be high-quality. “If you’re gluten-free, or if you’re eating clean like a Whole 30 lifestyle, you would be able to eat our food,” Heather explained. “Super high-quality is the most important thing to us. We want people to literally fall in love at first bite into our fajita tacos.”

Adios Fajitas will offer to-go margaritas that feature additive-free tequila by the half-gallon and gallon. “My husband is actually a tequila connoisseur. He really has enjoyed learning more about the tequila spirit over the past two years, and so we are going to bring that to our menu, as well,” Heather said.

“We are so excited. The community here is amazing,” she said, adding that Rockwall/Heath is a special place. “We really hope to bring something that people will see as a value to be able to feed their families.”

Once the Rockwall spot is up and running, they hope to expand into at least two other locations in the Dallas-Fort Worth Metroplex. All three partners have years of restaurant and customer service experience, and they are excited to see this restaurant concept come to fruition.
