Sweet Gilly’s Speciality Bake Shop Will Bring Show-Stopping Sweets to a Storefront Location This Spring

The vegan, cruelty-free bakery will open a shop in Frisco this spring where the owner says the eyes will eat first.

Dallas baker, Gillian Kirk, is upgrading Sweet Gilly’s Specialty Bake Shop from a successful cottage bakery to a dine-in storefront where customers can place custom orders or enjoy treats in store that are both delicious and diet-friendly, with vegan and gluten free options that never sacrifice flavor. Located at 3266 Parkwood Boulevard in Frisco, Sweet Gilly’s storefront is expected to open later this spring.

In an Instagram announcement, Gillian wrote, “My entire life has, and will continue to be, a love letter to my younger self; the little girl who created potions in her mother’s kitchen, who grew into a teenager who found great passion in art and baking, to the woman who is writing this post today, and the woman she will continue to nurture and become.” She goes on to express her gratitude to the customers who have made her long-held dream a reality. 

In addition to delivering on flavor, Gillian’s creations put on quite the show. She has recreated Van Gogh’s Starry Night, replicated royal pillows and crowns, and baked realistic historic landmarks — all in cake form. Other custom creations have featured florals, grinchy green cakes, and basically anything her customers can imagine.
