Though the details of Shun have yet to be announced, it will be a relative of the existing Yama Izakaya & Sushi restaurant which offers a casual and friendly environment serving what the website calls “authentic drinking foods, such as Takoyaki, Yakitori, Sunagimo (chicken gizzard) Kara-age, also some unique and modern dishes, along with Beer, Sake, Shochu.”
Shigekazu Tateno is the chef and owner, who applies his 18 years of experience in Dallas to delicately prepare dishes for his guests. The Lake Highlands Advocate says Shigekazu Tateno came to the states in 1997 and began working at Dallas sushi spots like Blue Sushi and Yutaka Sushi Bistro.
Tateno has expanded his Japanese cuisine to include a ramen and fried rice store, and Totto Yama which serves curry rice and yakitori. Learn more about Tateno’s ongoing creations at www.yamadallas.com
