The vegan fast-food restaurant concept that got its start as a food cart in San Antonio is set to open soon at 4814 Greenville Ave. The forthcoming location will include a drive-thru, as well as a full bar and live music.

The space was previously home to healthy food restaurant, Start, which closed in March 2020.

Originally, Project Pollo was planning to open in Dallas at 6857 Greenville Ave in 2021, but encountered numerous setbacks.

“We have been scrambling for 6 months trying to get open but have hit a lot of hurdles due [sic] some contractors not pulling permits on work done prior to our lease,” the brand posted in a social media update.

Fans of the brand are excited with the “much better” and “bigger” location announcement. “This is going to be so much better for you guys! The other location that you had chosen has never been successful for anyone because the the [sic] location is inconvenient to get in-and-out of and the neighborhood is super dodgy right there,” one commenter said.

Launched in 2020 by Lucas Bradbury, Project Pollo has several locations in San Antonio and Austin, as well as Houston and Katy. Locations are in the works for Corpus Christi and Round Rock. Despite having opened during the height of COVID-19, when the pandemic was negatively impacting the hospitality industry, Project Pollo has been on a roll over the past year with multiple restaurant openings and an expanding customer base. According to the San Antonio Current, the brand has a goal to open 100 restaurants by 2025.

“Inevitably the future of mass consumption is plant based; we want to lead that front, to put one on every corner and have affordable options in every community that surrounds us,” a statement from Bradbury on the brand’s website reads. Bradbury also co-owns cocktail lounge Jet-Setter and cocktail bar Pastiche in San Antonio.

On the menu at Project Pollo are a variety of vegan fried “chikn” sandwiches like the Original Project that comes topped with house aioli and dill pickles. There’s also the Spicy Project that’s served with spicy garlic buffalo sauce, house-made ranch, and pickled jalapeño.

Chikn nuggets, wraps, wings, bowls and Impossible burgers are also on the menu. Sides include mac and cheese and Loaded Papas – fries or tots smothered in Credo cashew queso and topped with pico, grilled onions, and chipotle ranch. You can also get crispy chikn nuggets on it.

Project Pollo Dallas is expected to soft open the week of Feb. 13 and will be open seven days a week.
