“The thing that sets us apart from all of the other places is that we’ll have beignets,” said Melissa Grimes, franchisee. The beignet is a French pastry dusted in powdered sugar. Other pastries at PJ’s Coffee include croissants, bagels, and muffins. Breakfast and lunch sandwich options are also available.

The PJ’s Coffee near Chisholm Trail Parkway at 7048 Granbury Rd. in Fort Worth will be the first for Grimes. She plans to open others in South Fort Worth and the Burleson area.

Grimes lives in Burleson, and she drives along the Chisholm Trail toll road into Fort Worth for her son’s school. “There’s no place that you could easily exit the toll road and get coffee, and so I decided to open one,” she told What Now Dallas.

“I’ve been to New Orleans before, and the drinks I’ve had at PJ’s were my favorite. So, I looked up to see if I could franchise them, and fortunately, I could,” Grimes said. Grimes is waiting on permitting and construction, but she hopes to open in January 2023.
