“Right now, we’re just finalizing some menu options. We’re doing tastings over the next three days just to lock in ideas that we all have. We also are waiting on our POS systems to come in, so that’s the big thing,” said Matthew Beeson, general manager of IWA Sushi Grill.

The menu will offer chef special rolls and daily specials. “Of course, we’re going to have entrees and appetizers, as well, anywhere from Chilean sea bass to filet to Wagyu beef and anything in between there,” Beeson told What Now Dallas.

IWA Sushi Grill will be able to seat nearly 90 diners indoors and will have a few tables in the front and back entrances for seating.

“The crew that we have put together has been in the industry for quite a while. Our combined years in the industry is well over 100,” Beeson said. “We have a great head chef in the kitchen, a great head chef in the sushi bar, and then myself and my assistant have both done everything from serving all the way up to district manager positions.”

This will be the first location for IWA Sushi Grill, which is owned by Daniel Lu. Lu operates other restaurants, but they are mostly fast-casual, counter-service restaurants.
