Koshi, a restaurant offering Japanese sushi and Korean cuisine, is growing. In McKinney at 1910 N Stonebridge Dr, unit 150, the restaurant is not moving, but is set to undergo a suite expansion to unit 100. Renovation work will cost an estimated $160,000. It will start at the end of June and wrap up at the end of September.

The location is part of Victory Shops at Stonebridge, a multi-phase project along Hwy 380 that is also home to such restaurants as E.J. Wills Gastropub and 11|17.

Sushi Koshi serves a variety of healthy dine-in or carry out dishes, with an emphasis on fresh fish, vegetables and meats. At the sushi bar, you can get citrus hamachi, tuna tataki, ahi tuna poke, and sushi burrito. There’s also salad, soup, tempura, and appetizers like edamame and spring rolls.

Lunch specials feature box combinations of your choice of protein – beef, chicken, or salmon teriyaki, beef bulgogi, spicy chicken, or Korean style beef short rib – served with salad or miso soup, white rice, fried gyoza and California rolls. There’s also Korean hot stone bowls, rice bowls, and noodle bowls.

Sushi Koshi is currently open for lunch – Thursdays through Sundays from 11 AM until 2:30 PM. And for dinner – Mondays through Thursdays from 4:30 PM until 9:30 PM, Fridays and Saturdays from 4:30 PM until 10 PM, Sundays from 4:30 PM until 9 PM.
