Koibito Poke, the newest innovative fast casual food concept to hit the restaurant landscape, has landed a partnership for rapid growth over the next few years and the Lone Star State will be a part of that.

The franchise sales agreement was signed with True Capital Partners LLC, which has committed to sell a minimum of 300 locations in eight states over the next five years. Along with Texas, the other initial states to be included in the national expansion agreement for Koibito Poke are California, Florida, Georgia, Idaho, North Carolina, South Carolina and Washington.

According to True Capital’s development schedule, the first 120 stores of the healthy poke concept are anticipated to be in place in the next 24-30 months.

Such a partnership aligns Koibito Poke with one of the most successful franchise development groups in the nation. True Capital just finished a successful 160 store expansion of a fast casual dessert restaurant franchise and was looking for a collaboration to participate in the fast-growing poke dining space. The group approached Koibito Poke because of its appeal to such a large customer audience.

Co-founded by former MLB pitcher and three-time World Series Champion, Todd Stottlemyre, the brand aims to set itself apart from others by serving healthy food that has great advantages to building the body’s immune system, as well as by a commitment not to follow the standard but to become it.

“Winning in any endeavor is difficult. Who you pick as your teammates will always determine your level of success,” Stottlemyre, who is also a two-time bestselling author and the brand’s Chairman and CEO, said in a news release. “In this case, I truly believe this exciting new initiative will be an integral step in building our all-star team. After spending a year looking for the right development partner, we are very pleased to engage with a group with such a proven track record for success.”

Adam Daniel, spokesperson for True Capital states, “We have been searching for a restaurant concept which could be a real success story and we are convinced that Koibito Poke was the absolute best positioned brand to dominate the national space going forward.”

On its menu, Koibito Poke offers four signature bowls along with build your own poke, chicken, tofu and veggie bowls. Guests choose from four bowl sizes and a base of either white rice, brown rice or mixed greens. Protein options include tuna, salmon, shrimp, grilled chicken, octupus, tofu and crab. They can then top if off with sauce and a variety of veggies from kale and edamame to seaweed salad and avocado.

In addition to this new franchise sales agreement, Koibito Poke is concentrating on expanding the brand throughout Arizona, Nevada, Utah, New Mexico and Colorado. The company currently has four locations in Arizona.
