‘Fresh Off the Grill’ Fajita Brand Will Open Frisco Location on Legacy Dr

Fajita Pete’s is planning to open its first Frisco location in spring 2022 at 4150 Legacy Dr. It will occupy suite 416 in the Lebanon/Legacy Center alongside Starbucks and Simply Thai Bistro.

According to a state project filing, renovation work will be started in February and be completed by April 2022 to turn the 1,263-square-foot space into a to-go, carry-out restaurant. The location is being brought to the area by G&S Business, an operator group that inked a deal in May of this year to bring 10 new Fajita Pete’s restaurants to greater North Dallas.

Comprised of David Howell, Richard Howell and Pat “Wheels” Smith, the G&S team brings more than 30 years of experience in multi-unit brands to the fast-growing fajita delivery chain. The company is a multi-unit franchisee of Zaxby’s, and David Howell has served as an executive leader of Hat Creek Burger Company. Richard Howell is a former board member of Red Robin Gourmet Burgers.

The group decided to get involved with Fajita Pete’s after Smith picked up an order of fajitas for dinner during a family visit to Dallas. Upon returning to Austin, he told the Howells about the concept and a partnership was commenced.

“Fajita Pete’s is poised for incredible growth because the concept embodies authentic quality while keeping maximum efficiency, from the menu to the build-out,” David Howell said in a release announcing the deal. “Further, it is ahead of its time in focusing on off-premise sales channels in a scaled-down box — it is truly innovative and will continue to be so.”

G&S-owned and -operated Fajita Pete’s are also planned for Plano, McKinney, Allen, Prosper and Richardson. This will bring the total number of Fajita Pete’s restaurants in greater North Dallas to 22. It has agreements in place for nearly 50 new restaurants.

Currently, the brand has 21 locations across Houston, Dallas and College Station, Texas, and Overland Park, Kansas, of which 18 are franchisee-owned.

Founded in 2008 by Pedro “Pete” Mora, the Houston-based brand began franchising in 2015 and has seen incredible success. Its simple menu includes chicken, beef, veggie and shrimp fajitas that are grilled-to-order and served with Mexican rice, refried beans, grilled onions, jalapeños, fresh hand-rolled tortillas, shredded cheese, pico de gallo, guacamole, lettuce, and chips and salsa. Guests can also get their fajitas mixed. Desserts and a drink selection of margaritas, beer, Horchatas, lemonade and tea is also available.

The brand offers curbside or in-store pickup, catering for any size group and limited dine-in from its small-footprint stores.
