The Big D is no stranger to two-time Michelin-starred chef Danny Grant. Earlier this year, Grant opened two new restaurants at downtown’s upscale Thompson Hotel in The National – Monarch, a wood-fired, modern Italian restaurant, and Kessaku, a sushi and sake lounge.

Grant’s third Dallas restaurant, Etta, is expected to open in Summer 2022 according to The Dallas Morning News. As part of his hospitality group, What If Syndicate, there are two existing Etta locations in Chicago and one in Culver City. Locations are also planned for Scottsdale, Houston, and Miami.

The name Etta means ‘keeper of the hearth’. According to the group’s website, “the heart of the etta experience is a wood-fired oven that serves up heartwarming favorites including fire baked focaccia, ricotta-honey and truffle, an array of seasonal pizzas and delicious handmade pastas.”

Every Etta location features an open kitchen design with a wood-burning brick oven for baking pizzas and a giant wood-fired hearth for spit roasting and grilling. Designed as a neighborhood restaurant, guests can expect a fun, relaxed dining environment that will feel as if they’re eating and drinking in their own home. The menu includes seasonal salads, family-style shared pig and lobster picnics, and fire-roasted whole branzino.

Per a report from Eater Dallas, the restaurant will sport a two-story, 11,000 square foot space in a renovated century-old building. The building is more than 100 years old and includes a second-floor patio, garage and alleyway space that the restaurant is hoping to making creative use of.

“(Developer) Todd Interests’ plan for the development of East Quarter in Dallas is progressive and incredibly thoughtful; we are honored to be a part of it,” Grant said in a press release statement. “It is the perfect place for us to expand our footprint after our success of Monarch and Kessaku at The National.”
