Frequenters of NorthPark Center will soon have the choice of another dining option among an already tasteful restaurant lineup.

CAVA, a growing fast-casual Mediterranean culinary brand, is set to join the food court in the upscale Dallas shopping mall. The restaurant will take over suite 2376, per a recent state project filing. Renovation work on the 1,087 square foot space is expected to start in August and be completed in October.

With a heavy focus on fresh, guests can build their own salad, pita, or green and/or grain bowl at CAVA. There’s also an option to build a bowl made with RightRice – a high protein and high fiber grain made from 90% vegetables such as lentils and chickpeas.

After choosing a base, you add your protein. There’s falafel, spicy lamb meatballs, grilled chicken, and roasted white sweet potato. Toppings include pickled onions, cabbage slaw, avocado, Kalamata olives, corn and pita crisps. A variety of dressings, dips and spreads – many of which are also sold in Whole Foods Market locations and specialty grocery stores across the U.S. – are also available.

Founded by Dimitri Moshovitis, Ted Xenohristos and Ike Grigoropoulos – three first-generation Greek Americans – the first CAVA opened in 2011 in Rockville, Maryland. Today, the brand has almost 80 locations on the East Coast, in Southern California, and Texas.

CAVA currently has four other Dallas locations: Lakewood – 2009 Abrams Pkwy; Park Lane – 8018 Park Ln, suite 100; Turtle Creek – 3878 Oak Lawn Ave, suite 314; and Uptown – 1919 McKinney Ave.

A fifth Dallas location is coming to the city’s Casa Linda neighborhood later this year at 9323 Garland Rd.

Other North Texas locations include Addison, Coppell, Flower Mound, Frisco, Irving, Plano, Richardson, Southlake, and Fort Worth.
